  • Vermont Creamery Classic Goat Cheese

    8 ounces room temperature

  • ½ teaspoon kosher salt

  • ½ teaspoon lemon juice

  • ⅛ cup parsley, chopped

  • ⅛ cup chives, chopped

  • ¼ cup candied pecans, finely chopped

  • assorted crackers

Directions

  1. In a large bowl combine the room temperature fresh goat cheese with the lemon juice and salt. Mix well, then gently pack the cheese into one large ball, set aside
  2. On a large plate, or shallow bowl, combine the chopped parsley, chives, and candied pecans
  3. Gently roll the cheese ball into the herb and nut mixture, pressing the herbs and nuts lightly into the ball to form an even layer around the outside. Place on platter alongside some crackers and serve immediately

recipe notes:

If you want to make this in advance, wrap the cheese ball fully in plastic wrap once it's been coated in the herb and nut mixture and store in the refrigerator. Let it come to room temperature before serving for spreadable consistency.
